Natural Smoking — Hot vs Cold

In traditional natural smoking methods, there are generally two main types: hot smoking and cold smoking, each creating distinct differences in the color, texture, and flavor of salmon.

Natural Smoking (Hot)

Hot smoking is done at high temperatures, around 70°C (158°F) or higher, enough to cook the fish during the smoking process. Under the effect of high heat, the color and texture of the salmon change significantly, with the flesh becoming fully cooked and firmer. The smoking duration can be short or long depending on the thickness and weight of the food.
This method produces a strong smoky flavor, and the fish is fully cooked.

Natural Smoking (Cold)

In contrast, cold smoking is done at low temperatures, around 20–30°C (68–86°F), over a long period of time. With this method, the fish is not cooked, retaining its natural orange color and original texture. The extended smoking process inhibits the activity of surface microorganisms, allowing the fish to be preserved longer while maintaining its healthy oils.
Cold-smoked salmon is usually sliced thinly, keeping it plump, tender, and fresh-tasting. Because of these advantages, most premium smoked salmon today is prepared using cold smoking.
