Smoked salmon with pancakes

Smoked salmon can be combined with many dishes, and pancakes are a very interesting choice, especially for young children. The small, soft, buttery pancakes, when eaten with smoked salmon and mayonnaise, create a light, creamy flavor that’s very easy to eat. This is also a fun dish for children to participate in making, helping them become more familiar with and enjoy smoked salmon.

Ingredients

  • Flour: 150 grams
  • Unsweetened fresh milk: 300 ml
  • Eggs: 2
  • Salt: 1 tsp
  • Melted butter: 3 tbsp
  • Baking powder: 1 tsp
  • Vanilla: 1 tsp

How to Make Pancakes

  1. Sift the flour, baking powder, and salt.
  2. Beat the eggs and mix with the fresh milk.
  3. Sift the flour mixture into the milk mixture, stirring gently until smooth.
  4. Add melted butter and vanilla, mix well.
  5. Let the batter rest for about 30 minutes.
  6. Heat a non-stick pan, brush with a thin layer of oil.
  7. Scoop the batter into pancakes about 6 cm in diameter.
  8. When bubbles appear on the surface of the pancake and it turns light golden, flip it over and fry the other side until cooked through.

Serving Suggestion

  • Pancakes: 15 pieces
  • Smoked salmon: 150 grams
  • Mayonnaise: 150 grams
  • Lemon juice: 1 tsp
  • Chopped green onions (for garnish)

Mix mayonnaise with lemon juice, then:

  1. Spread the sauce on the pancakes.
  2. Place sliced smoked salmon on top.
  3. Sprinkle with green onions and enjoy.
