Smoked Salmon with Five-Color Fried Rice

Smoked salmon fried rice is a convenient meal for packed lunches to take to work or for children to bring to school.
Just add a little fruit and yogurt for a complete and balanced lunch box.
The fried rice is colorful from the vegetables, and combined with richly flavored smoked salmon, it creates a very appealing aroma.

Ingredients

  • Cold rice refrigerated so the grains become dry and firm: 3 bowls
  • Smoked salmon cut into small cubes: 150 grams
  • Eggs: 2
  • Diced onion: 100 grams
  • Canned corn: 100 grams
  • Diced carrot: 50 grams
  • Green peas: 50 grams
  • Garlic olive oil: 3 tbsp
  • Salt: 1/2 tsp
  • Chopped scallions: 1 tbsp
  • Light soy sauce

Instructions

  1. Mix the rice with the eggs so the egg coats the rice grains evenly.
  2. Sauté the onion with garlic olive oil until fragrant, then add the corn and carrots and cook through.
  3. Add the rice and fry until the grains become firm and separate.
  4. Season with salt to taste.
  5. Heat another pan, add garlic olive oil, then quickly stir-fry the smoked salmon.
  6. Mix the smoked salmon into the fried rice and stir well.
