Ingredients

Salad Dressing

  • Lemon olive oil: 6 tbsp
  • Lemon juice: 3 tbsp
  • Honey: 1 tbsp
  • Fresh thyme (or dried thyme): 1 tsp
  • Salt: 1/3 tsp
  • Pepper: 1/3 tsp

Place all ingredients into a jar and shake well.

Salad Bowl

  • Sliced smoked salmon: 150 grams
  • Mixed salad greens: rocket, iceberg, romaine: 250 grams
  • Avocado, peeled and sliced: ½
  • Herb-dried tomatoes: 20 grams
  • Toasted sliced almonds: 1 tbsp
  • Soft-boiled egg: 1

Presentation

Arrange the salad greens in a bowl.
Shape the smoked salmon slices into a rose and place on top of the greens.
Add the avocado, sliced almonds, and egg.
Drizzle the salad dressing over before serving.

Notes

Lemon juice can be replaced with orange juice or pomegranate juice to create a new fruit-flavored salad dressing.
