The journey of Salmon Family began in our home kitchen back in 2013, born from my passion for cooking cozy family meals and my husband’s fascination with science.
Using a DIY smoker built by my husband, I tinkered until our very first batch of smoked salmon emerged— oh my goodness, it was incredibly delicious, with a stunning, vibrant red color. However, the path forward was far from easy; transitioning from making it for our family to bringing it to the market was an entirely different story.
Our family spent many years selecting ingredients, refining flavors, researching smoking techniques, and perfecting our methods to create a 100% natural, preservative-free, homemade product with its own unique signature.
Benefits of Smoked Salmon
Smoked salmon provides a moderate amount of calories while being rich in high-quality protein, healthy fats, vitamins, and essential minerals. 100 grams of smoked salmon provides 86% of your daily Vitamin D needs and is a rich source of Omega-3 fatty acids.In 100 grams, it also contains 0.5g of EPA and DHA, which are important for brain and heart health and help slow down aging. These are essential fats that must be obtained through your diet.
Hot smoking is performed at high temperatures of approximately 70°C or higher, which is sufficient to cook the fish meat directly during the smoking process.
Under the influence of high heat, the color and texture of the salmon will change significantly, with the meat becoming cooked and firmer. The smoking duration can be flexible depending on the thickness and weight of the food.
This method produces a bolder smoky flavor and ensures the fish is fully cooked, making it ideal for dishes that require rich flavors and a firm texture.
In contrast to hot smoking, cold smoking is a long-duration process conducted at low temperatures, around 20–30°C.
With this method, the fish is not cooked by heat but cured through the smoking process, preserving its natural color and original texture. This extended duration inhibits harmful microorganisms, extending shelf life while retaining all beneficial vitamins and amino acids.
This technique yields a distinctively fresh flavor with a succulent, tender, and silky texture that is easy to sense.
